Ingredients

  • 1 kg white fish fillets
  • 75 g butter melted
  • 1/2 tsp lemon rind, finely grated
  • 1 tbs lemon juice
  • 2 garlic clove crushed
  • 1 1/2 cornflake crumbs
  • 2 tbs parsley chopped fresh
  • 1 cooking oil spray

Method

  • Step 1
    Cube fish and thread onto skewers.
  • Step 2
    Mix together melted butter, lemon rind and juice, and garlic.
  • Step 3
    Brush mixture over skewers.
  • Step 4
    Coat skewers in cornflake mixture and place on well-greased baking tray.
  • Step 5
    Refrigerate at least 30 minutes to set crumbs.
  • Step 6
    Preheat oven to 240C.
  • Step 7
    Spray skewers with cooking oil and cook for approximately 15-20 minutes until tender and golden.
Recipe Notes

Garnish with fresh lemon wedges.
