Chunks of white fish skewered and baked with corn flake crumbs.
Ingredients
- 1 kg white fish fillets
- 75 g butter melted
- 1/2 tsp lemon rind, finely grated
- 1 tbs lemon juice
- 2 garlic clove crushed
- 1 1/2 cornflake crumbs
- 2 tbs parsley chopped fresh
- 1 cooking oil spray
Method

Step 1Cube fish and thread onto skewers.

Step 2Mix together melted butter, lemon rind and juice, and garlic.

Step 3Brush mixture over skewers.

Step 4Coat skewers in cornflake mixture and place on well-greased baking tray.

Step 5Refrigerate at least 30 minutes to set crumbs.

Step 6Preheat oven to 240C.

Step 7Spray skewers with cooking oil and cook for approximately 15-20 minutes until tender and golden.
