I used to make this in restaurants and it was always a big hit. So I made this on Boxing Day last year and a kilo disappeared in less than 5 minutes! It's a quick and easy garlic prawn recipe that will leave people asking for more and raving about them for months to come.
Ingredients
- 300 ml cream
- 1 1/2 tsp cornflour
- 5 garlic cloves finely chopped
- 1/2 bunch chives finely chopped
- 1/4 tsp chicken stock powder
- 1/4 tsp sugar
- 1/2 tsp black pepper
- 1 kg tail-on prawns shelled
- 2 garlic cloves thinly sliced *extra
- 1 tsp cornflour *extra
- 1 tbs olive oil
Method

Step 1Combine first seven ingredients and set aside, preferably the day before needed.

Step 2Mix garlic and cornflour with ½ the oil.

Step 3Heat the remaining 1/2 of oil, toss in the prawns and garlic cornflour mixture and cook until prawns are ¾ cooked.

Step 4Add cream mixture and cook for 2 minutes or until thick.

Step 5Serve with some good crusty bread.
Recipe Notes
For the crusty bread, try this variation: slice crusty bread into thick slices and grill one side. Drizzle the un-grilled side with olive oil. Mix a little minced garlic, parmesan cheese and cracked pepper, and lightly sprinkle onto oiled bread. Grill. This is great by itself but better with the prawns!
