A delicious, crunchy on the outside chewy in the middle, buttery cookie.
Ingredients
- 1 cup self-raising flour
- 1 cup Kellogg's Cornflakes
- 3/4 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup desiccated coconut
- 1/3 cup dried apricots finely chopped
- 1/3 cup sultanas
- 150 g butter melted
- 1 egg beaten
- 1 tbs honey
Method

Step 1Mix together all dry ingredients.

Step 2Combine all wet ingredients and mix into the dry mixture.

Step 3Roll approximately 1 large tablespoon of mixture into a ball and pat flat onto baking tray lined with baking paper.

Step 4Bake for 12 minutes at 180C.
