For the best brownies that are crisp around the edges and perfectly fudgy in the centre, this recipe is hard to beat! Plus they're super-easy to prepare – just mix the batter and pop in the oven for the ultimate tasty chocolate treat.
Ingredients
- 125g butter
- 1 1/2 cups caster sugar
- 1/2 cup cocoa powder
- 2 eggs
- 1 tsp vanilla essence
- 1/4 tsp salt
- 1 cup plain flour
- 1 tsp baking powder
- 1 cup white choc bits
Method

Step 1Melt the butter in a medium saucepan.

Step 2Stir in sugar, cocoa, vanilla and salt.

Step 3Remove from heat and allow to cool slightly.

Step 4Quickly whisk in eggs.

Step 5Fold through sifted flour and baking powder.

Step 6Mix in choc bits.

Step 7Spoon the mixture into a greased and lined 18cm x 28cm slab tin.

Step 8Bake at 170C for 25-30 minutes.

Step 9The mixture will seem soft, but will harden upon cooling.

Step 10Allow to cool in the tin before removing and slicing.

The choc bits will melt a little when you stir them into the mixture.

How do you know when brownies are cooked?
The trick with brownies is to remove them from the oven when the edges have set, but the centre still looks a little soft (but not raw). Then let them cool completely in the tin at room temperature before cutting them. This should result in lovely fudgy brownies.
How long will brownies keep for?
Store these brownies in an airtight container in the fridge for up to 3 days. You can also freeze these brownies for up to 2 months. Wrap in foil or cling wrap to make sure they are completely airtight before freezing.
