Chinese Red Bean Porridge Soup

This is the recipe from my grandma. Chinese women believe eating red bean and coix seed or barley can make them more beautiful especially when they are cooked together. It's very easy to make, but does take a little time. We often cook it on Sunday afternoon. - Connie87

Ingredients

  • 1/2 cup sugar
  • 1 cup red canned kidney beans
  • 1/2 cup pearl barley
  • 1/4 cup peanuts
  • 1/4 cup rice
  • 5 cup water

Method

  • Step 1
    Soak beans and barley in cold water for at least 5 hours.
  • Step 2
    Combine water and beans, barley and peanuts in a large pot. Boil for 3-5 minutes.
  • Step 3
    Reduce heat to simmer, cook uncovered for 30-40 minutes or until beans are tender.
  • Step 4
    Add the rice balls and boil for 3-5 minutes. Reduce the heat again for about 15 minutes.
  • Step 5
    Add the sugar and serve.
Recipe Notes
I used rice balls. If you can't find rice balls just use rice instead. The porridge is very thick and if you want a soup more then a porridge you can add more water or shorten the cooking time.
