Ingredients

  • 2 lime shredded
  • 1 1/2 cup red capsicum coarsely chopped
  • 2 cloves garlic thinly sliced
  • 1 tsp ginger fresh grated
  • 1/2 cup long red chilli deseeded thinly sliced
  • 1 1/2 cup tomato diced ripe
  • 2 tbs lime juice
  • 2 cup caster sugar

Method

  • Step 1
    Place a saucer in the refrigerator to chill.
  • Step 2
    Combine the capsicum, garlic, ginger, chillies, tomatoes, lime rind and lime juice in a large 14-cup capacity microwave-safe glass bowl.
  • Step 3
    Cook, uncovered, on high power for 8 minutes. Stir in sugar until dissolved.
  • Step 4
    Cook, uncovered, on high power for approximately 20 minutes, or until jam jells when tested on the chilled saucer.
  • Step 5
    Pour jam into hot sterilised jars and seal while jam is still hot. Refrigerate after opening.

  • 1 heatproof bowl
  • 1 microwave
Recipe Notes
You will need approximately 1 tablespoon of shredded lime rind. Fantastic jam, well received wherever I serve it, great with lamb, steaks or chicken. Shred limes into long strips.
