A fun recipe to make at home with the kids.
Ingredients
- 250g butter, at room temperature
- 3 tbs icing sugar
- 1 egg yolk, seperated
- 1 tsp vanilla sugar
- 1/2 tsp lemon zest
- 1/2 cup crushed hazelnuts
- 1 tbs baking powder
- 2-2 1/2 cups plain flour
Icing
- 1/2 cup icing sugar
- 2 tbsp water
- 1-2 drops food colouring (any colour)
Method

Step 1Beat the butter and icing sugar until pale and creamy. Add the yolk, vanilla sugar, lemon zest, half the hazelnuts, baking powder and flour. Knead until there is a dough like consistency.

Step 2Form dough into 2 balls and place in tightly wrapped GLAD wrap. Place in the fridge for ten minutes.

Step 3Pre-heat the oven to 180C and line 2 baking trays with GLAD baking paper.

Step 4Roll out the dough until 5mm thick.

Step 5Using cookie cutters, cut shapes, letters or numbers, then re-roll the cut-offs and re-shape until all the dough is used. Brush cookies with egg white and dip into crushed almonds.

Step 6Place the cookies on a tray and cook for 15 - 20 minutes, then set aside to cool.

Step 7For icing: Mix 1/2 cup icing sugar with 2 tablespoons of water and add food colour to your liking. Decorate cookies with icing and serve.
Recipe Notes
Icing is totally optional.
I like to dust in icing sugar if there's no icing.
