Try this bright and colourful plate of sesame pork rissole lettuce cups for a quick, healthy dinner. The rissoles are incredibly moreish with a crispy sesame crust.
Ingredients
- 500g pork mince
- 3/4 cup fresh breadcrumbs
- 1 egg, lightly beaten
- 1 tbs fish sauce
- 1 garlic clove, crushed
- 2 tsp finely grated lime rind
- 1/4 cup white sesame seeds
- 1/4 cup black sesame seeds (see note)
- 1/4 cup peanut oil
- 350g packet Asian-style salad kit
- 1/2 cup fresh coriander sprigs
- 1/2 cup whole-egg mayonnaise
- 1/4 cup sweet chilli sauce
- 12 butter lettuce leaves
- Lime wedges, to serve

Step 1Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper.

Step 2Place mince, breadcrumbs, egg, fish sauce, garlic and lime rind in a large bowl. Season with salt and pepper. Using hands, mix well. Shape into 12 rissoles. Combine sesame seeds on a plate. Press rissoles into seed mixture to lightly coat on both sides.

Step 3Heat oil in a large frying pan over medium-high heat. Cook rissoles, in batches, for 1 minute each side or until browned. Transfer to prepared tray. Bake for 10 minutes or until cooked through.

Step 4Meanwhile, place salad kit ingredients, including dressing, in a bowl. Add coriander. Toss to combine. Whisk mayonnaise with sweet chilli sauce. Fill lettuce cups with salad mixture. Top each with a rissole. Serve with sweet chilli mayonnaise and lime wedges.
