Ingredients

  • 225 g butter
  • 1 cup sugar
  • 2 egg
  • 1 cup pumpkin mash
  • 500 g mixed fruit
  • 2 cup plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1 tsp lemon essence

Method

  • Step 1
    Preeat oven to 180C.
  • Step 2
    Grease and line a 20 cm ring tin.
  • Step 3
    Cream butter and sugar until fluffy.
  • Step 4
    Add eggs, one at a time, mixing well.
  • Step 5
    Add pumpkin and mix until smooth.
  • Step 6
    Add the sifted flour and baking powder.
  • Step 7
    Add the fruit and essences.
  • Step 8
    Add to the prepared pan and bake for 1-1½ hours.
  • Step 9
    Cool in the tin.

  • 1 20cm round cake pan
