A moist fruit cake that keeps well and has the family eating pumpkin!
Ingredients
- 225 g butter
- 1 cup sugar
- 2 egg
- 1 cup pumpkin mash
- 500 g mixed fruit
- 2 cup plain flour
- 1 tsp baking powder
- 1 tsp vanilla essence
- 1 tsp lemon essence
Method

Step 1Preeat oven to 180C.

Step 2Grease and line a 20 cm ring tin.

Step 3Cream butter and sugar until fluffy.

Step 4Add eggs, one at a time, mixing well.

Step 5Add pumpkin and mix until smooth.

Step 6Add the sifted flour and baking powder.

Step 7Add the fruit and essences.

Step 8Add to the prepared pan and bake for 1-1½ hours.

Step 9Cool in the tin.
