A delicious filling winter soup.
Ingredients
- 1 cauliflower finely chopped
- 2 onion diced
- 6 potato diced peeled
- 6 bacon rashers diced
- 1/2 bunch fresh thyme
- 2 garlic clove crushed
- 1L chicken stock (liquid)
- 1 cup cream
- 2 corncob
- 1 tbs olive oil
Method

Step 1Saute onions, bacon, garlic and thyme in a little olive oil.

Step 2When softened, add cauliflower and cook until light golden brown.

Step 3Add potatoes and enough stock to cover and cook until softened.

Step 4Puree half the soup and then mix back in with stripped corn kernels.

Step 5Simmer for another 15 minutes, season with salt and pepper and add cream.

Step 6Warm through and serve.
