A delicious filling winter soup.

Ingredients

  • 1 cauliflower finely chopped
  • 2 onion diced
  • 6 potato diced peeled
  • 6 bacon rashers diced
  • 1/2 bunch fresh thyme
  • 2 garlic clove crushed
  • 1L chicken stock (liquid)
  • 1 cup cream
  • 2 corncob
  • 1 tbs olive oil

Method

  • Step 1
    Saute onions, bacon, garlic and thyme in a little olive oil.
  • Step 2
    When softened, add cauliflower and cook until light golden brown.
  • Step 3
    Add potatoes and enough stock to cover and cook until softened.
  • Step 4
    Puree half the soup and then mix back in with stripped corn kernels.
  • Step 5
    Simmer for another 15 minutes, season with salt and pepper and add cream.
  • Step 6
    Warm through and serve.
