This meatball stew with potatoes is nourishing and so moreish, definitely it's one of my favourite meals growing up. This recipe was given to me by my mother who got the recipe from her mother.
Ingredients
- 200g minced beef
- 2 cloves garlic, crushed
- 1 tbs fine bulgur (burghul)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp chilli flakes
- Salt
- 2 tbs olive oil
- 1 onion, diced
- 1 tbs tomato paste
- 3 medium sized potatoes, peeled and cubed
- 2 tbs flour
Method

Step 1To prepare the meatballs: In a bowl add the beef, garlic, burghul, black pepper, red pepper, chilli flakes and salt. Knead for a couple of minutes ensuring all ingredients are mixed well. Cover with cling wrap and rest in the fridge for 15 minutes.

Step 2In a saucepan fry the onion in olive oil until softened, add the tomato paste and cook for a minute or two. Add the potatoes along with 2 litres of water and bring to the boil.

Step 3Meanwhile add the flour on a flat plate and roll the minced meat and place on the plate. Once all the meat is completely rolled out, roll the meatballs so they are coated in flour.

Step 4Add the meatballs slowly into the pot. Add salt and pepper, mix the ingredients, and cook on medium heat for 40-50 minutes. You will know it’s cooked when the mixture thickens.

Step 5Garnish with chilli flakes or parsley as desired but not essential.
