How to make basic pancakes: key tips

After you mix the batter in the bowl, let it rest for around 30 minutes, if you have the time. Resting allows the flour to fully absorb the liquid, resulting in a smoother batter. It also gives the leavening agents time to create the small bubbles of gas that make your pancakes light and fluffy.

When cooking your pancakes, make sure that your pan isn’t too hot, or they’ll burn quickly. A medium-low heat is perfect for when you want to give your pancakes time to rise and become fluffy all the way through. A medium heat will create a crispier outer, if that’s what you prefer.
