On a cold night, we love having oven dish for dinner. Heat from oven keeps us warm, as does the heat of from the curry. The cheese topping help to reduce the spiciness and adds a little extra yum! - Summer69

Ingredients

  • 2 cups of cooked rice
  • 1/2 onion, diced
  • 1 small carrot, diced
  • 1/2 cup canned corn, drained
  • 1/2 cup frozen peas
  • 1-2 tbsp curry powder
  • 1 tbsp tomato ketchup
  • 1 tsp Massel* Chicken Stock Powder
  • 1/2 cup grated cheese
  • 1 tbsp olive oil
  • salt and pepper

Method

  • Step 1
    Preheat oven to 180c. In a large frying pan, heat oil over medium high heat. Cook onion and carrot.
  • Step 2
    Add cooked rice, cook for 5 minutes, then add corn and peas, combine well.
  • Step 3
    Add curry powder, stock powder, and ketchup, combine (adjust curry powder to your liking). Season to taste.
  • Step 4
    Transfer rice to oven proof dish, top with cheese and bake for about 20 minutes.
  • Step 5
    Remove from oven, allow to cool a little and enjoy.
Recipe Notes
Note: You can add any vegetables. Adjust curry powder as your liking.
