All-In Sausage Casserole

Comfort food dinner all cooked in the electric frypan! It's easy and a real family favourite.

Ingredients

  • 500 g sausage
  • 2 onions chopped thickly sliced
  • 2 cups mixed vegetables
  • 4 potatoes cubed
  • 3 carrots sliced
  • 2 tbs beef stock (liquid)
  • 2 tbs tomato sauce *to taste
  • 2 tbs barbecue sauce *to taste
  • 1 tsp soy sauce optional
  • 1 tsp mixed herbs
  • 250 ml water
  • 1 cup water

Method

  • Step 1
    Fry onions in electric frypan. Move to the side of the pan.
  • Step 2
    Wet hands and form small amounts of sausage meat into balls.
  • Step 3
    Add to frypan, flatten slightly with fork and brown on both sides.
  • Step 4
    Add a little water to prevent burning. Stir sausages to loosen.
  • Step 5
    Add vegetables.
  • Step 6
    Mix remaining ingredients and pour into pan. Stir well.
  • Step 7
    Cook on medium setting, stirring regularly, until vegetables are cooked through. Add more flavourings to taste and add additional water, if needed.
  • Step 8
    Serve with bread to mop up the gravy.
Recipe Notes

Instead of the sauce above, try a can of chicken and mushroom condensed soup, with water added to suit.

A teaspoon of curry powder adds punch to this meal and it's really great the next night with the flavour really coming through.
