Preparation time is 20 minutes but it takes at least 1 and a half hours to cook.
Ingredients
- 750 g bone-in ham shoulder
- 3/4 cup plain flour
- 2 tbs olive oil
- 200 g bacon rashers finely chopped
- 2 cloves garlic crushed
- 4 leek large sliced
- 1 carrot chopped large
- 2 potato diced large
- 1 1/4 cups beef stock (liquid)
- 1 bay leaf
- 2 tsp parsley chopped
- 2 sheets puff pastry
- 1 egg lightly beaten
Method

Step 1Toss meat in flour and brown in batches over medium heat.

Step 2Remove meat from pan and set aside.

Step 3Fry bacon, garlic and leek for 5 minutes.

Step 4Add the meat to a large saucepan and add bacon mixture, carrot, potato, stock and bay leaf, and bring to the boil.

Step 5Reduce heat, cover and simmer for 10 minutes.

Step 6Uncover and simmer for another 30 minutes or until the liquid has thickened.

Step 7Remove bay leaf and stir in parsley, and set aside to cool.

Step 8Preheat oven to 200C.

Step 9Line an 18 cm pie dish with pastry and pour meat mixture in.

Step 10Brush with beaten egg and bake for 45 minutes.
