Welsh Lamb Pie

Ingredients

  • 750 g bone-in ham shoulder
  • 3/4 cup plain flour
  • 2 tbs olive oil
  • 200 g bacon rashers finely chopped
  • 2 cloves garlic crushed
  • 4 leek large sliced
  • 1 carrot chopped large
  • 2 potato diced large
  • 1 1/4 cups beef stock (liquid)
  • 1 bay leaf
  • 2 tsp parsley chopped
  • 2 sheets puff pastry
  • 1 egg lightly beaten

Method

  • Step 1
    Toss meat in flour and brown in batches over medium heat.
  • Step 2
    Remove meat from pan and set aside.
  • Step 3
    Fry bacon, garlic and leek for 5 minutes.
  • Step 4
    Add the meat to a large saucepan and add bacon mixture, carrot, potato, stock and bay leaf, and bring to the boil.
  • Step 5
    Reduce heat, cover and simmer for 10 minutes.
  • Step 6
    Uncover and simmer for another 30 minutes or until the liquid has thickened.
  • Step 7
    Remove bay leaf and stir in parsley, and set aside to cool.
  • Step 8
    Preheat oven to 200C.
  • Step 9
    Line an 18 cm pie dish with pastry and pour meat mixture in.
  • Step 10
    Brush with beaten egg and bake for 45 minutes.
