Ingredients

Pork skewers

  • 2 tbs jasmine rice
  • 500 g pork mince
  • 3 spring onion
  • 2 garlic clove crushed
  • 2 tbs fish sauce
  • 1 tsp ground black pepper
  • 1 tsp palm sugar

Peanut sauce

  • 1 tbs oil
  • 1 garlic clove crushed
  • 1 long red chilli finely chopped
  • 1/2 cup unsalted roasted peanuts finely chopped
  • 1/2 cup water
  • 1/3 cup coconut milk
  • 1 tbs tamarind paste
  • 1 tbs fish sauce
  • 1 tbs palm sugar finely grated

Method

  • Step 1
    Pork skewers: Dry cook the rice until browned, about 3-4 minutes, set aside until cool, then pound until crushed.
  • Step 2
    Use bulb of spring onion only. Combine all ingredients and form into small balls, set aside in fridge for about 30 minutes, then thread on wooden skewers that have been soaked in water, 3 to a skewer.
  • Step 3
    Grill or barbeque.
  • Step 4
    Peanut sauce: Heat the oil, add the garlic and chilli, then the peanuts, stir until golden.
  • Step 5
    Add the remaining ingredients, stir until golden and thickened, set aside.
