Ingredients

  • 400 g plain flour
  • 250 ml lukewarm water
  • 7 g dry yeast
  • 1 tsp salt
  • 1 tsp sugar

Method

  • Step 1
    In the bowl of the mixer, add ½ the flour, water, yeast and sugar.
  • Step 2
    Mix on medium with paddle attachment for 6-7 minutes until a thick batter consistency is formed.
  • Step 3
    Remove mixing bowl and seal with cling wrap, allow to stand until dough is 2-3 times the size. This may take 30 minutes or more.
  • Step 4
    Once mixture has risen add remaining flour and salt.
  • Step 5
    Mix on low with the dough hook attachment for another 6-7 minutes.
  • Step 6
    Remove mixing bowl and seal with cling wrap, allow to stand until dough has risen twice the size, approximately 30 minutes.
  • Step 7
    Preheat oven to 220-250C.
  • Step 8
    Remove half the dough, place on a floured board and press flat.
  • Step 9
    Push and stretch out the dough and place on pizza dish. Continue pushing and stretching until the pizza dish is covered.
  • Step 10
    Add favourite toppings and bake for several minutes until ready. Check frequently while cooking. Slightly under-cooked is better than over-cooked.
Recipe Notes
Makes 2 large pizzas. Some important points are to use high protein flour, easily obtained at the supermarket, don't be tempted to use self-raising flour. It is not the same. Preheat the oven and flatten the dough with your hand and then stretch, pull and push to size. Don't use a rolling pin! You have gone to a lot of trouble to get air into your dough and a rolling pin if used too heavily will push out the air from the dough. Use high protein flour.
