A lovely flavour in this recipe, really easy and good for a 'bring and share' dish.
Ingredients
- 2 tbs oil
- 1 onion chopped
- 1 garlic clove crushed
- 1 tsp fresh ginger grated
- 6 (fillets) chicken thighs sliced
- 2 tbs curry powder
- 1 potato chopped large
- 2 carrots chopped medium
- 1 tsp sugar
- 425 g tomato puree
- 1/4 cup fruit chutney
- 2 tbs tomato paste
- 1 1/2 cups water
- 1/2 cup frozen peas
Method

Step 1Heat oil and add onion, garlic and ginger, and stir-fry until onion is soft.

Step 2Add chicken and stir-fry until lightly brown.

Step 3Add curry, potato and carrots, and stir-fry 2 minutes.

Step 4Add sugar, puree, chutney, tomato paste, water and peas.

Step 5Bring to the boil and simmer uncovered until chicken and vegetables are cooked and sauce is slightly thickened.
Recipe Notes
This recipe freezes well.
It can also be a vegetarian dish if you leave out the chicken and toss in a large can of chickpeas when the tomato puree is added. You may need a bit more water if using chickpeas.
