Ingredients

  • 500 g sausage
  • 500 g tomato paste
  • 3 potato large thinly sliced
  • 1 onion large thinly sliced
  • 250 g lasagne sheets
  • 1 cup cheese grated

Bechamel sauce

  • 3 tbs butter
  • 1/3 cup plain flour
  • 2 cup milk
  • 125 g cheddar cheese grated
  • 3 tbs parmesan cheese
  • 1/2 tsp salt and pepper
  • 1 tbs nutmeg

Method

  • Step 1
    Cook sausages in a fry pan until cooked through. Slice sausages thinly.
  • Step 2
    Bechamel sauce: Melt butter in saucepan, add flour, salt, pepper and nutmeg and blend until smooth.
  • Step 3
    Stir over heat for 1 minute, then remove from heat.
  • Step 4
    Gradually add milk, stirring well between each addition.
  • Step 5
    Return to the heat and stir until the sauce boils and thickens. Reduce the heat and cook for 1 minute.
  • Step 6
    Remove from heat and stir in grated cheeses until melted.
  • Step 7
    Grease baking dish with spray oil.
  • Step 8
    Cut lasagne sheets into an appropriate size.
  • Step 9
    Cover the base of the baking tray with a layer of potato, sprinkled with onion.
  • Step 10
    Pour one third of the bechamel sauce over the potato mix. Arrange sausage pieces to cover the sauce then spread one third of the tomato paste thinly over the top of the sausages.
  • Step 11
    Arrange lasagne sheets on top.
  • Step 12
    Repeat until second layer of lasagne sheets is placed.
  • Step 13
    Pour the remaining third of the bechamel sauce mixed with the remaining tomato paste on top. Sprinkle with grated cheese and some Parmesan.
  • Step 14
    Cover and bake at 150C for approximately 1 hour, removing cover in the last 10 minutes.

Recipe Notes
I actually use a microwave to make the bechamel sauce by mixing the melted butter with the milk and flour, cooking for one minute, stirring, adding the grated cheeses, and cooking another minute, stirring after each cook. I find it much quicker and less messy. To shorten cooking time, soften potatoes and onions by microwaving them first.
