Sausage Curry and Rice

Ingredients

  • 8 sausage
  • 1 tbs oil
  • 2 onion diced
  • 2 tsp garlic minced
  • 1 red capsicum diced
  • 3 tbs tikka masala Indian curry paste
  • 400 g canned chopped tomato
  • 150 ml thickened cream

Method

  • Step 1
    Boil sausages for 15 minutes or until cooked, allow to cool then slice into small pieces.
  • Step 2
    In a large frying pan, add oil and saute onion and garlic.
  • Step 3
    Add curry paste and cook another 2 minutes.
  • Step 4
    Add diced capsicum, chopped tomatoes and cream, stir to combine.
  • Step 5
    Add chopped sausages, and simmer for 5-10 minutes or until heated through.
  • Step 6
    Serve with rice.
Recipe Notes
Use whatever curry paste you like and adjust heat to taste. I have also used Pataks Balti and that is really nice.
