Thai-style whole fish baked then grilled until crisp.
Ingredients
- 1 whole fish
- 4 garlic cloves crushed
- 1/4 cup lemongrass stalk chopped fresh
- 1 cup fresh coriander chopped
- 2 red bird's eye chillis finely chopped
- 2 tbs sweet chilli sauce
- 1 tbs fresh ginger grated
- 1 tbs red Thai curry paste
- 2 tbs fresh lime juice
- 2 tbs sweet chilli sauce
Method

Step 1Make four deep slits diagonally across both sides of fish. Place fish in a shallow non-metallic ovenproof dish.

Step 2Combine remaining ingredients, except extra chilli sauce, in medium bowl. Pour over fish, refrigerate up to 3 hours.

Step 3Preheat oven to 180C.

Step 4Cover dish with a lid or foil, bake for about 35 minutes or until fish is cooked through.

Step 5Brush fish with extra chilli sauce, then grill for about 10 minutes or until skin is browned and crisp.
