Ingredients

  • 2 kg beef chuck steak
  • 1/4 cup plain flour
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 50 g butter
  • 1 onion chopped
  • 2 leek sliced small
  • 4 carrot chopped
  • 4 garlic clove chopped
  • 2 bay leaf
  • 1 tsp dried thyme
  • 2 1/2 cup red wine
  • 1 packet button mushrooms *to taste
  • 1/2 cup parsley chopped *to taste
  • 1 pinch seasoning

Method

  • Step 1
    In a plastic bag, combine the flour, salt and ground black pepper. Shake to coat the beef cubes with this mixture.
  • Step 2
    Melt the butter or margarine in a large skillet over medium-high heat.
  • Step 3
    Add the meat in small portions and brown well. Place in crock pot or casserole dish as ready.
  • Step 4
    Add the rest of the ingredients and mix through.

    Cover and cook for 8-10 hours in crook pot or bake, covered, at 180C for 2½-3 hours.
  • Step 6
    Add the mushrooms and parsley 1-2 hours prior to serving, depending on method of cooking.
Recipe Notes

You can use any stewing meat. Use a good quality red wine. The more slowly this is cooked, the more tender and tasty this dish will be. Serve with mashed or roasted potatoes and greens, and French bread for mopping up the juices.
