How to make rice paper rolls: key tips
It’s really important when making rice paper rolls to keep the wrappers wet. The wrappers are sold in dried sheets and so you need to soak them so that they become pliable.
Working with one rice paper wrapper at a time, use cool water for dipping (never hot) and don’t oversoak it – about 20 seconds should do it. You want the wrappers bendable but not so soft that they break up when rolling. If you’ve soaked them just enough but still find you have trouble with them breaking when you roll them, try using less filling.

The ingredients in these rice paper rolls are very kid-friendly – chicken, lettuce, carrot, cheese and alfalfa. I find shredding leftover barbecued chicken is perfect for these rolls, but you could also use shredded or chopped cooked chicken breast or thigh fillet. Feel free to change the ingredients to suit you and your family (see notes, below).

Ingredients
- 6 rice paper sheets
- 1 cup lettuce shredded
- 1 cup carrot grated
- 1/2 cheese grated
- 1/2 cup alfalfa sprouts
- 1 cup cooked chicken shredded
Method

Step 1Soak 1 rice paper in a shallow dish of water until just soft (about 20 seconds).

Step 2Lay on bench and place lettuce on one end of the rice paper.

Step 3Add carrot, cheese, alfalfa and chicken, and season to taste.

Step 4Roll up to form an envelope.

Step 5Leave with join facing down for a few minutes to set.

Rice paper rolls are super versatile and you can fill them with all kinds of meats, fresh vegetables and herbs. Try shredded barbecued chicken, thinly sliced carrot and cucumber, and mint; or chopped prawns, thinly sliced red onion and cucumber, bean shoots, grated carrot, mint, coriander and softened rice noodles. You could also add flaked tuna or salmon, or chopped avocado, egg, ham or peanuts to your rice paper rolls.
What can I serve with these rice paper rolls?
Dipping sauces take relatively bland rice paper rolls to the next level. Try satay sauce (my favourite!), soy sauce, sweet chilli sauce, Japanese kewpie mayonnaise, aioli, hoisin sauce or teriyaki sauce for starters.
