One of those old, but good slices that the kids love.
Ingredients
- 3 tbs butter
- 125 g sugar
- 1 pinch salt
- 1 tsp vanilla essence
- 1 1/4 cup self-raising flour
Filling
- 1/2 cup raspberry jam
- 1 cup coconut
- 1/2 cup sugar
- 1 egg
Method

Step 1Beat butter and sugar to a cream.

Step 2Add egg and beat well. Add vanilla.

Step 3Gradually sift in flour and salt, and work into a stiff paste.

Step 4Press out evenly into a greased lamington pan and spread jam thinly over pastry.

Step 5Make filling by beating egg then add coconut and sugar.

Step 6Sprinkle over jam.

Step 7Bake at 180C for 20-30 minutes until lightly browned.

Step 8Cool slightly before cutting into squares.

Recipe Notes
Any jam can be used for this slice, or even a sweet orange marmalade or lime and ginger marmalade for adult palates.
