Ingredients

  • 3 tbs butter
  • 125 g sugar
  • 1 pinch salt
  • 1 tsp vanilla essence
  • 1 1/4 cup self-raising flour

Filling

  • 1/2 cup raspberry jam
  • 1 cup coconut
  • 1/2 cup sugar
  • 1 egg

Method

  • Step 1
    Beat butter and sugar to a cream.
  • Step 2
    Add egg and beat well. Add vanilla.
  • Step 3
    Gradually sift in flour and salt, and work into a stiff paste.
  • Step 4
    Press out evenly into a greased lamington pan and spread jam thinly over pastry.
  • Step 5
    Make filling by beating egg then add coconut and sugar.
  • Step 6
    Sprinkle over jam.
  • Step 7
    Bake at 180C for 20-30 minutes until lightly browned.
  • Step 8
    Cool slightly before cutting into squares.

Equipment

  • 1 lamington pan
Recipe Notes
Any jam can be used for this slice, or even a sweet orange marmalade or lime and ginger marmalade for adult palates.
