Penne with Creamy Bacon Sauce

This is the creamiest pasta dish I have ever tasted. I have had this recipe for 8 years and have only ever looked at it. Last night I made it and everyone thought it was delicious. It's my favourite pasta dish ever! - AngelDust

Ingredients

  • 1 tbs olive oil
  • 500 g leek large sliced
  • 4 bacon rashers roughly chopped
  • 2 garlic clove crushed
  • 300 g zucchini sliced
  • 350 g button mushrooms halved
  • 1 tbs dijon mustard
  • 300 ml light sour cream
  • 1 tsp vegetable stock powder
  • 180 ml milk
  • 1 pinch salt and pepper
  • 500 g penne

Method

  • Step 1
    Heat oil in a large saucepan. Add leek, bacon and garlic. Cook, stirring, until the leek is soft and the bacon is browned.

  • Step 2
    Add zucchini and mushrooms to the pan and cook, stirring, until zucchini is just soft.
  • Step 3
    Stir in the mustard, cream, stock and milk, and continue stirring until hot. Add salt and pepper to taste, keep warm on low heat.
  • Step 4
    Add pasta to a large pan of boiling salted water and boil uncovered until tender.
  • Step 5
    Drain pasta and toss the sauce through it.

Recipe Notes

I sometimes substitute ham for the bacon but just use more ham. Don't be tempted to cut the mushrooms in quarters. Only cut in half as they do shrink after cooking. I used Vegeta stock.
