Ingredients

  • 1 kg parsnip peeled stems trimmed
  • 300 ml cream
  • 1 pinch salt and pepper

Method

  • Step 1
    Cut parsnips in half lengthways. Remove cores. Cut into 4cm pieces.
  • Step 2
    Place parsnips into a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium.
  • Step 3
    Simmer for 15 minutes or until just tender. Drain.
  • Step 4
    Return parsnips to saucepan over low heat.
  • Step 5
    Shake pan gently until any remaining water evaporates.
  • Step 6
    Add cream, and salt and pepper.
  • Step 7
    Cook over low heat, stirring, for 15 minutes or until a mash forms.
  • Step 8
    Season with salt and pepper. Serve.
