Creamy sweet parsnip mash.
Ingredients
- 1 kg parsnip peeled stems trimmed
- 300 ml cream
- 1 pinch salt and pepper
Method

Step 1Cut parsnips in half lengthways. Remove cores. Cut into 4cm pieces.

Step 2Place parsnips into a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium.

Step 3Simmer for 15 minutes or until just tender. Drain.

Step 4Return parsnips to saucepan over low heat.

Step 5Shake pan gently until any remaining water evaporates.

Step 6Add cream, and salt and pepper.

Step 7Cook over low heat, stirring, for 15 minutes or until a mash forms.

Step 8Season with salt and pepper. Serve.
