Great dinner and wonderful way to get kids and adults to eat vegetables.
Ingredients
- 4 potato large unpeeled
- 1 tbs vegetable oil
- 1 brown onion finely chopped large
- 300 g beef mince
- 35 g Mexican seasoning
- 400 g canned diced tomato
- 1/2 cup frozen mixed vegetables
- 425 g Three-Bean canned mixed beans
- 1/2 cup cheese shredded
- 1 packet sour cream *to serve
Method

Step 1Preheat oven to 220C or 200C fan-forced.

Step 2Spray potatoes with oil and wrap each one in foil. Bake for 30 minutes.

Step 3Remove foil from potatoes and bake for 30 minutes more or until tender.

Step 4While potatoes are cooking, heat oil in a large non-stick frying pan over moderate heat.

Step 5Cook and stir onion for 3 minutes or until soft.

Step 6Add mince, stirring to break up any lumps, for 5 minutes.

Step 7Stir in seasoning, tomato, vegetables and beans.

Step 8Cook for 5 minutes or until thickened slightly.

Step 9Place potato on serving plates. Cut a cross in the tops and squeeze gently to open.

Step 10Spoon beef mixture over potatoes, sprinkle with cheese and top with sour cream.
Recipe Notes
If you prefer your food with a bit more heat, try adding some chopped chillies or a dash of Tabasco.
