Ingredients

  • 4 potato large unpeeled
  • 1 tbs vegetable oil
  • 1 brown onion finely chopped large
  • 300 g beef mince
  • 35 g Mexican seasoning
  • 400 g canned diced tomato
  • 1/2 cup frozen mixed vegetables
  • 425 g Three-Bean canned mixed beans
  • 1/2 cup cheese shredded
  • 1 packet sour cream *to serve

Method

  • Step 1
    Preheat oven to 220C or 200C fan-forced.
  • Step 2
    Spray potatoes with oil and wrap each one in foil. Bake for 30 minutes.
  • Step 3
    Remove foil from potatoes and bake for 30 minutes more or until tender.
  • Step 4
    While potatoes are cooking, heat oil in a large non-stick frying pan over moderate heat.
  • Step 5
    Cook and stir onion for 3 minutes or until soft.

  • Step 6
    Add mince, stirring to break up any lumps, for 5 minutes.
  • Step 7
    Stir in seasoning, tomato, vegetables and beans.
  • Step 8
    Cook for 5 minutes or until thickened slightly.
  • Step 9
    Place potato on serving plates. Cut a cross in the tops and squeeze gently to open.
  • Step 10
    Spoon beef mixture over potatoes, sprinkle with cheese and top with sour cream.
Recipe Notes

If you prefer your food with a bit more heat, try adding some chopped chillies or a dash of Tabasco.
