Really easy, really quick and really delicious.
Ingredients
- 125 g soft butter
- 1/3 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 3/4 cup self-raising flour
- 1/2 cup plain flour
- 1/3 cup desiccated coconut
- 1 cup raspberry jam
- 1 cup buttercream icing
Method

Step 1Beat butter, sugar and vanilla with an electric mixer until light and fluffy. Add the egg and beat until combined.

Step 2Sift in the flours. Stir until combined, then add coconut and stir through.

Step 3Roll heaped teaspoons mixture into balls. Place on a baking tray and press down with a fork.

Step 4Bake at 180C (160C fan forced) for 12-15 minutes or until golden. Transfer to a wire rack to cool completely.

Step 5Once cooled, spread one biscuit with jam and the other with buttercream icing and sandwhich together.
Recipe Notes
You can use any jam you like.
You could also make a low fat version with reduced fat table spread and a sugar substitute.
