Ingredients

  • 125 g soft butter
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 3/4 cup self-raising flour
  • 1/2 cup plain flour
  • 1/3 cup desiccated coconut
  • 1 cup raspberry jam
  • 1 cup buttercream icing

Method

  • Step 1
    Beat butter, sugar and vanilla with an electric mixer until light and fluffy. Add the egg and beat until combined.

  • Step 2
    Sift in the flours. Stir until combined, then add coconut and stir through.
  • Step 3
    Roll heaped teaspoons mixture into balls. Place on a baking tray and press down with a fork.
  • Step 4
    Bake at 180C (160C fan forced) for 12-15 minutes or until golden. Transfer to a wire rack to cool completely.
  • Step 5
    Once cooled, spread one biscuit with jam and the other with buttercream icing and sandwhich together.
Recipe Notes

You can use any jam you like.

You could also make a low fat version with reduced fat table spread and a sugar substitute.
