Ingredients

  • 1 canola oil spray
  • 250 g ham leg cut into strips deboned
  • 300 g four bean canned mixed beans drained
  • 250 ml taco sauce
  • 2 burrito tortillas
  • 1 cup tasty cheese shredded
  • 1 iceberg lettuce

Method

  • Step 1
    Spray a high-sided frypan with canola oil and just heat the ham without browning it.
  • Step 2
    Put the beans in a mixing bowl and crush them slightly. Add to the pan and mix.
  • Step 3
    Add the taco sauce, combine well and heat until starting to simmer. Continue to stir for 5-10 minutes.
  • Step 4
    Heat the burrito bread according to packet instructions. Roll each with a combination of ham and bean mix, lettuce and cheese.

Equipment

  • 1 frying pan
Recipe Notes
Other fillings like chopped tomato, avocado, sour cream and onion can be added if you like. Don't over-fill the burrito bread, or you'll end up with filling everywhere!
