Ingredients: 2 1/2 cup plain flour; 2 tbs cornflour; 1/4 cup cocoa; 1 tbs bicarbonate of soda; 1/2 tsp baking powder; 1 tsp ground cinnamon; 1 cup sugar; 3/4 cup brown sugar; 125 g butter; 1/2 cup oil; 1 tsp vanilla extract; 1/2 cup milk; 50 g cooking chocolate roughly chopped; 50 g cooking chocolate grated; 2 cup zucchini grated

Needing to use up monster zucchinis and baking my weekly lunch box fillers these eventuated. Now I love them! And the kids have no idea there's so much zucchini in there! - Jazbright

Ingredients

2 1/2 cup plain flour
2 tbs cornflour
1/4 cup cocoa
1 tbs bicarbonate of soda
1/2 tsp baking powder
1 tsp ground cinnamon
1 cup sugar
3/4 cup brown sugar
125 g butter
1/2 cup oil
1 tsp vanilla extract
1/2 cup milk
50 g cooking chocolate roughly chopped
50 g cooking chocolate grated
2 cup zucchini grated

Method

Step 1

Preheat oven to 180C. Line a 20cm x 30cm slice pan.
Step 2

With electric beaters, Cream butter, oil, sugar and vanilla.
Step 3

Combine dry ingredients, reserving the grated cooking chocolate.
Step 4

Add milk and creamed mixture to dry and stir until just combined. Add zucchini and combine.
Step 5

Pour into lined slice pan, spread evenly and top with grated chocolate.
Step 6

Bake for 45 mins. Let cool.
