One of my favourite pies.
Ingredients
- 2 tbs olive oil
- 1 brown onion finely chopped
- 2 bunch English spinach
- 2 tbs fresh dill chopped
- 200 g fetta crumbled
- 1/2 cup cheddar cheese grated
- 1/2 tsp ground nutmeg
- 4 egg lightly beaten
- 60 g butter melted
- 10 filo pastry sheets
Method

Step 1Heat oil in a large frying pan over medium-high heat.

Step 2Saute onion in olive oil for 3 minutes or until onion is soft.

Step 3Roughly shred spinach leaves and add to onion. Cook for 2 minutes.

Step 4Remove from heat and cool.

Step 5Fold through dill, feta, grated cheese, nutmeg and eggs. Season with salt and pepper.

Step 6Preheat oven to 180C. Grease a 26 x 18 cm slab tin (or whatever dish size you have) with melted butter.

Step 7Place a sheet of filo onto a flat surface. Brush with butter and top with another sheet of filo. Repeat 4 more times.

Step 8Line prepared tin with buttered pastry.

Step 9Spoon spinach mixture into pastry base.

Step 10Prepare remaining 4 sheets of filo as before with melted butter.

Step 11Lay pastry over the top of the spinach mixture.

Step 12Trim edges and brush top of pie with remaining butter.

Step 13Bake for 45 minutes or until golden and cooked through.

Step 14Cut into squares to serve.

- 1 baking dish
Recipe Notes
I used a 26x18cm slab tin but you can simply cut the filo pastry sheets to suit the size of your baking dish or pan.
Serve hot or cold.
