English Spinach and Cheese Pie

Ingredients

  • 2 tbs olive oil
  • 1 brown onion finely chopped
  • 2 bunch English spinach
  • 2 tbs fresh dill chopped
  • 200 g fetta crumbled
  • 1/2 cup cheddar cheese grated
  • 1/2 tsp ground nutmeg
  • 4 egg lightly beaten
  • 60 g butter melted
  • 10 filo pastry sheets

Method

  • Step 1
    Heat oil in a large frying pan over medium-high heat.
  • Step 2
    Saute onion in olive oil for 3 minutes or until onion is soft.
  • Step 3
    Roughly shred spinach leaves and add to onion. Cook for 2 minutes.
  • Step 4
    Remove from heat and cool.
  • Step 5
    Fold through dill, feta, grated cheese, nutmeg and eggs. Season with salt and pepper.
  • Step 6
    Preheat oven to 180C. Grease a 26 x 18 cm slab tin (or whatever dish size you have) with melted butter.
  • Step 7
    Place a sheet of filo onto a flat surface. Brush with butter and top with another sheet of filo. Repeat 4 more times.
  • Step 8
    Line prepared tin with buttered pastry.
  • Step 9
    Spoon spinach mixture into pastry base.
  • Step 10
    Prepare remaining 4 sheets of filo as before with melted butter.
  • Step 11
    Lay pastry over the top of the spinach mixture.
  • Step 12
    Trim edges and brush top of pie with remaining butter.
  • Step 13
    Bake for 45 minutes or until golden and cooked through.
  • Step 14
    Cut into squares to serve.

Equipment

  • 1 baking dish
Recipe Notes
I used a 26x18cm slab tin but you can simply cut the filo pastry sheets to suit the size of your baking dish or pan. Serve hot or cold.
