Very yummy, quick and easy pie.
Ingredients
- 8 bacon rashers cut into pieces trimmed
- 8 eggs
- 3 tbs milk
- 2 tbs parsley chopped
- 2 sheets puff pastry thawed
- 4 tomatoes cut into pieces
- 1 pinch salt and pepper
Method

Step 1Fry the bacon until brown. Alternatively, microwave for approximately 3 minutes. Drain and put aside to cool.

Step 2Mix 1 egg with milk and parsley.

Step 3Line a 20-22 cm flan or pie dish with baking paper, then with 1 sheet of pastry. Pierce pastry with fork to let the air out.

Step 4Preheat oven to 220C.

Step 5Place half the bacon in the base, then top with tomatoes.

Step 6Break the remaining eggs over the tomatoes. Pierce the eggs with fork. Scatter the remaining bacon over the eggs, then pour the egg, milk and parsley mixture over the top. Season with salt and pepper.

Step 7Close the pie with other sheet of pastry. Fold the edges of pastry hanging over the edge into the middle to seal the pie.

Step 8Brush with a little milk and make a small hole in the centre.

Step 9Bake for 10 minutes, reduce the temperature to 180C and cook for a further 30 minutes.

Recipe Notes
Tomatoes may be substituted with zucchini, mushrooms or sweet potato.
This can be served hot or cold with salad or vegetables.
