No mess, no fuss omelette.
Ingredients
- 4 egg
- 1/2 cup milk
- 3 mushrooms chopped
- 1 tomato chopped small
- 1/4 cup spring onion
- 1 pinch salt and pepper
- 1 tbs olive oil
Method

Step 1Whisk eggs and milk until combined and set aside.

Step 2Heat a little olive oil in a medium non-stick frypan and add mushrooms, tomato and spring onion. Cook, stirring, until mushrooms and tomato are soft.

Step 3Add salt and pepper.

Step 4Pour in egg and milk mixture. Cook on one side for about 2 minutes and flip.

Step 5Cook for a further minute.

Step 6Garnish with parsley. Serve hot.
Recipe Notes
Great with bacon and toast or just on its own with some Worcestershire and tomato sauce.
