Ingredients

  • 4 egg
  • 1/2 cup milk
  • 3 mushrooms chopped
  • 1 tomato chopped small
  • 1/4 cup spring onion
  • 1 pinch salt and pepper
  • 1 tbs olive oil

Method

  • Step 1
    Whisk eggs and milk until combined and set aside.
  • Step 2
    Heat a little olive oil in a medium non-stick frypan and add mushrooms, tomato and spring onion. Cook, stirring, until mushrooms and tomato are soft.
  • Step 3
    Add salt and pepper.
  • Step 4
    Pour in egg and milk mixture. Cook on one side for about 2 minutes and flip.
  • Step 5
    Cook for a further minute.
  • Step 6
    Garnish with parsley. Serve hot.
Recipe Notes
Great with bacon and toast or just on its own with some Worcestershire and tomato sauce.
