How to make devilled sausages: key tips

This dish starts by cooking the sausages in a pan as you usually would. Then you simply chop them into bite-sized pieces and plonk them in a casserole dish.

Pan-frying the onion, garlic and apple, before adding it to the sausages, helps to soften and caramelise them, so they add maximum flavour to the dish.

Key ingredients in this devilled sausages recipe

You can use pork or chicken sausages for this recipe, and the green apple matches perfectly with both. Having said that, lots of ABR members have also used beef sausages with success. You could even use leftover sausages, as they need to be cooked before adding to the gravy.

The sauces and sugar add sweetness and tang. You can swap the malt vinegar for any other vinegar, if that’s what you have on hand.

I love these sausages served with creamy mashed potato to soak up all the gravy (also, you can’t beat bangers and mash), but you could also serve it on steamed rice. Adding steamed vegetables to the plate will also boost the nutrition factor.

Ingredients

  • 550g Woolworths Pork Sausages
  • 1 tbs canola oil
  • 1 garlic clove crushed
  • 2 onions thinly sliced
  • 1 green apple thinly sliced
  • 400g canned chopped tomatoes
  • 1/4 cup tomato sauce
  • 1/4 cup barbecue sauce
  • 2 tbs brown sugar
  • 2 tbs malt vinegar

Method

  • Step 1
    Pan-fry sausages until browned and just cooked. Remove and cool slightly.

    Chop into pieces and place into a casserole dish.
  • Step 3
    Heat oil in the same frying pan you cooked sausages in and fry garlic, onions and apple until soft.

    Add to sausages.
  • Step 5
    Mix together remaining ingredients and pour over sausages, apple and onion mix.

    Cover casserole and cook in oven at 180C for 25-30 minutes.
Recipe Notes

Can I make these devilled sausages vegetarian? 

This is so easy to do – just swap your sausages for vegie sausages! You could also add some chopped carrot and/or celery, if you like, for added veg. Simply soften them in the pan with the onion mixture.

Do I need the apple in these devilled sausages?

I find that using green (or red) apple makes a noticeable difference in this dish. Green apple brings a unique, slightly tart, flavour that complements the savoury notes of the sausages, while sweeter red varieties balance out the deep tangy flavours of the sauces.
