Ingredients

  • 85 g mango jelly
  • 1 cup boiling water
  • 1/3 cup cold water
  • 1 cup fat-free natural yoghurt
  • 2 banana sliced *to decorate
  • 2 passionfruit *to decorate

Method

  • Step 1
    Combine jelly crystals and boiling water in a heat proof bowl. Stir until the crystals are dissolved.
  • Step 2
    Add the cold water and stir to combine. Refrigerate for half an hour.
  • Step 3
    Add yoghurt to cold jelly, whisk until smooth.
  • Step 4
    Divide mixture between four 1-cup capacity serving glasses. Cover and refrigerate for at least 4 hours.
  • Step 5
    Top with banana and drizzle with passionfruit pulp.
Recipe Notes
You could also make this with diet jelly crystals. I have made this with raspberry jelly and topped it with frozen mixed berries and I have also made it with lime jelly and put very thin slices of lime on it.
