Ingredients
- 1 kg potato large peeled
Method

Step 1Cut potatoes into large chips.Simmer chips in water for 15 minutes. Drain.

Step 2Place in freezer for 45-60 minutes in open container

Step 3Par-cook chips in oil at 120C for 10 minutes. Drain.

Step 4When ready to serve, cook chips again in oil at 180C until golden and crisp.
