How to make Chinese pork mince stir-fry: key tips

The vegetables and meat in this stir-fry are cooked quickly so that they remain tender-crisp. Using a wok is perfect for this, as the heat is spread evenly. You can also use a large frying pan if you don’t have a wok. Just be sure to keep moving the ingredients around in the pan so that they never sit and stew in the pan juices. No-one wants a soggy stir-fry!

Jasmine rice is usually the type of rice served with Chinese food. This long grain rice has a subtle floral aroma and can become soft and sticky when cooked. Give it a good rinse before you cook it, and it is less likely to turn out gluggy. You can also use basmati rice, if you like. It is lower in GI than jasmine, and isn’t quite as perfumed.

Ingredients

  • 2 garlic cloves crushed
  • 1 chilli deseeded fresh thinly sliced whole
  • 1 tbs ginger finely chopped fresh
  • 2 tsp sesame oil
  • 500g pork mince
  • 3 spring onions sliced
  • 2 tsp Woolworths Essentials Brown Sugar
  • 2 tbs soy sauce
  • 2 tbs oyster sauce
  • 250g fresh green beans cut lengthways
  • 30g unsalted roasted peanuts chopped
  • 3 tbs fresh basil
  • 2 tbs water
  • Jasmine rice, to serve

Method

  • Step 1
    Combine chilli, ginger and garlic in a bowl. Cut green beans into 5cm lengths.

  • Step 2
    Heat a non-stick wok over high heat and add oil. Once oil is hot, add garlic, ginger, chilli and spring onions and stir.
  • Step 3
    Cook for a minute or so, then add the pork mince. Once pork is cooked, add green beans and stir fry.
  • Step 4
    While beans are still crisp, add sugar, soy sauce, oyster sauce and 2 tablespoons of water.
  • Step 5
    Allow to cook for a further 2 minutes, or until the sauce has reduced a little.
  • Step 6
    Finally add peanuts and fresh basil, and serve immediately with jasmine rice.

What is the best way to peel fresh ginger?

A very easy way to peel ginger is to use a spoon – both a teaspoon and a tablespoon work for this job. Hold the spoon like you would a vegetable peeler and use the edge of the spoon to scrape the skin off the ginger. The skin should come away quite easily, and the spoon will be able to get around all those knobbly ginger rhizomes.

How long can I keep this Chinese pork mince stir-fry?

Store any leftovers in an airtight container in the fridge for up to 4 days. This stir-fry can also be frozen for up to 3 months.
