A fantastic alternative to mash, this creamy cheesy polenta is a winner with the whole family, and so easy to prepare!
Ingredients
- 2 cups chicken stock (liquid)
- 2 cups milk
- 1 cup polenta
- 20 g butter diced
- 1/2 cup parmesan finely grated
- 2 tbs parsley chopped
Method

Step 1Bring chicken stock and milk to the boil.

Step 2Gradually add polenta to stock mixture, stirring constantly. Reduce heat.

Step 3Simmer, stirring, for 5-10 minutes or until polenta thickens.

Step 4Add butter, parmesan, parsley and seasoning to the polenta, stirring until cheese melts.

Step 5Serve while hot.
Recipe Notes
This dish is wonderful with a hearty beef stew instead of boring mash potato or plain rice.
I use a heaped tablespoon of chicken stock powder dissolved in 2 cups of hot water, if there is no liquid stock on hand.
I don't usually need to add any extra seasoning - it's tasty as is!
