A fantastic alternative to mash, this creamy cheesy polenta is a winner with the whole family, and so easy to prepare!

Ingredients

  • 2 cups chicken stock (liquid)
  • 2 cups milk
  • 1 cup polenta
  • 20 g butter diced
  • 1/2 cup parmesan finely grated
  • 2 tbs parsley chopped

Method

  • Step 1
    Bring chicken stock and milk to the boil.
  • Step 2
    Gradually add polenta to stock mixture, stirring constantly. Reduce heat.
  • Step 3
    Simmer, stirring, for 5-10 minutes or until polenta thickens.
  • Step 4
    Add butter, parmesan, parsley and seasoning to the polenta, stirring until cheese melts.

    Serve while hot.
Recipe Notes

This dish is wonderful with a hearty beef stew instead of boring mash potato or plain rice.

I use a heaped tablespoon of chicken stock powder dissolved in 2 cups of hot water, if there is no liquid stock on hand.

I don't usually need to add any extra seasoning - it's tasty as is!

What is polenta made of?

Made from ground corn, polenta is a staple of Italian cooking. When cooked it has a porridge-like consistency, or once cooled it will go solid and can be cut into pieces and then baked or fried. It can also be added to sweet cakes and biscuits. Here are some more ideas for cooking with polenta.
