Ingredients

  • 1 tbs olive oil
  • 1/2 onion diced peeled
  • 1 carrot diced peeled
  • 1/4 capsicum diced seeded
  • 1 pinch seasoning to taste
  • 500g beef mince
  • 2 tsp Vegemite
  • 2 tbs tomato paste
  • 1/4 cup cheddar cheese shredded
  • 1 sheet puff pastry cut in half
  • 2 tbs milk optional to brush

Method

  • Step 1
    Pre-heat oven to 180C.
  • Step 2
    Heat oil in a large pan and add onion, carrot and capsicum.

    Turn until onion turns translucent.
  • Step 4
    Season with salt and pepper. Add mince and stir until browned.
  • Step 5
    Add vegemite and tomato paste and mix through thoroughly.
  • Step 6
    Divide mixture between two small pie dishes and top with cheese.
  • Step 7
    Top with pastry and glaze with milk.
  • Step 8
    Bake for 30 minutes or until golden and puffy.

This was inspired by some vegetables in the fridge that were starting to look a bit sad.
