Super-easy pies, using just a few basic ingredients.
Ingredients
- 1 tbs olive oil
- 1/2 onion diced peeled
- 1 carrot diced peeled
- 1/4 capsicum diced seeded
- 1 pinch seasoning to taste
- 500g beef mince
- 2 tsp Vegemite
- 2 tbs tomato paste
- 1/4 cup cheddar cheese shredded
- 1 sheet puff pastry cut in half
- 2 tbs milk optional to brush
Method

Step 1Pre-heat oven to 180C.

Step 2Heat oil in a large pan and add onion, carrot and capsicum.

Step 3Turn until onion turns translucent.

Step 4Season with salt and pepper. Add mince and stir until browned.

Step 5Add vegemite and tomato paste and mix through thoroughly.

Step 6Divide mixture between two small pie dishes and top with cheese.

Step 7Top with pastry and glaze with milk.

Step 8Bake for 30 minutes or until golden and puffy.

This was inspired by some vegetables in the fridge that were starting to look a bit sad.
