Ingredients

  • 2kg baby potatoes
  • 1 cup fresh mint
  • 1 cup fresh flat-leaf parsley
  • 2 tbs honey
  • 1 tbs wholegrain mustard
  • 1/2 cup olive oil
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Boil potatoes whole until just tender, drain.
  • Step 2
    In a food processor, combine herbs, honey and mustard, then drizzle in oil to form the dressing.
  • Step 3
    Season well with sea salt and freshly ground black pepper.
  • Step 4
    Combine well with potatoes. Serve hot or cold.
Recipe Notes

Extra oil or other ingredients can be added to taste when making the dressing.
