A brilliant, quick batter that is never fail, we love it on fish, prawns, chicken tenders etc.
Ingredients
- 3/4 cup plain flour
- 2 tablespoons cornflour
- 1/4 teaspoon bicarb soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Cold water, to bring to required consistency
Method

Step 1Sift dry ingredients into a mixing bowl.

Step 2Add water and whisk to incorporate ingredients to the required thickness, just slightly thicker than pancake batter.

Step 3Lightly coat fillets with flour, completely coat with batter. Hold over bowl to allow excess to drop off briefly then place in hot cooking oil.

Step 4After 2 minutes, turn and cook until browned.
Recipe Notes
I start with 1¼ cups. I like to add a generous pinch of fresh ground pepper as well, but it's still delicious without it. I have never known a better batter. Makes 2 cups.
