Ingredients

  • 3/4 cup plain flour
  • 2 tablespoons cornflour
  • 1/4 teaspoon bicarb soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Cold water, to bring to required consistency

Method

  • Step 1
    Sift dry ingredients into a mixing bowl.
  • Step 2
    Add water and whisk to incorporate ingredients to the required thickness, just slightly thicker than pancake batter.
  • Step 3
    Lightly coat fillets with flour, completely coat with batter. Hold over bowl to allow excess to drop off briefly then place in hot cooking oil.
  • Step 4
    After 2 minutes, turn and cook until browned.
Recipe Notes
I start with 1¼ cups. I like to add a generous pinch of fresh ground pepper as well, but it's still delicious without it. I have never known a better batter. Makes 2 cups.
