The whole dried apricots used in this cake create a delicious flavour.
Ingredients
- 200 g dried apricots
- 100 g butter
- 100 g caster sugar
- 2 egg
- 75 g almond meal
- 75 g self-raising flour
- 12 blanched almonds
- 1 icing sugar
Method

Step 1Place the apricots in a medium-sized saucepan and cover with cold water.

Step 2Bring to a simmer and continue heating for a further 5 minutes.

Step 3Turn off the heat and allow the apricots to cool in the liquid. Drain.

Step 4Preheat oven to 200C.

Step 5Using an electric beater, cream the butter and sugar for a few minutes.

Step 6Beat in the eggs.

Step 7Stir in the almond meal and the flour but don't over mix.

Step 8Lastly, stir in the apricots, setting 10 aside for decoration.

Step 9Carefully pour the mixture into an 18 cm well-buttered and floured round cake tin, tapping the tin to distribute the mixture evenly over the base.

Step 10Arrange the almonds and remaining apricots on top.

Step 11Bake for 50 minutes.

Step 12Remove from the oven and allow to cool for 10 minutes before carefully unmoulding onto a cake rack.

Step 13Allow to cool completely before dusting with icing sugar just before serving.
Recipe Notes
This is so delicious and has never failed for me. The only word of caution is maybe cover the cake with foil for the first 20 minutes, as the apricots on top tend to burn.
