Ingredients

  • 200 g dried apricots
  • 100 g butter
  • 100 g caster sugar
  • 2 egg
  • 75 g almond meal
  • 75 g self-raising flour
  • 12 blanched almonds
  • 1 icing sugar

Method

  • Step 1
    Place the apricots in a medium-sized saucepan and cover with cold water.
  • Step 2
    Bring to a simmer and continue heating for a further 5 minutes.
  • Step 3
    Turn off the heat and allow the apricots to cool in the liquid. Drain.
  • Step 4
    Preheat oven to 200C.
  • Step 5
    Using an electric beater, cream the butter and sugar for a few minutes.
  • Step 6
    Beat in the eggs.
  • Step 7
    Stir in the almond meal and the flour but don't over mix.
  • Step 8
    Lastly, stir in the apricots, setting 10 aside for decoration.
  • Step 9
    Carefully pour the mixture into an 18 cm well-buttered and floured round cake tin, tapping the tin to distribute the mixture evenly over the base.
  • Step 10
    Arrange the almonds and remaining apricots on top.
  • Step 11
    Bake for 50 minutes.
  • Step 12
    Remove from the oven and allow to cool for 10 minutes before carefully unmoulding onto a cake rack.
  • Step 13
    Allow to cool completely before dusting with icing sugar just before serving.
Recipe Notes
This is so delicious and has never failed for me. The only word of caution is maybe cover the cake with foil for the first 20 minutes, as the apricots on top tend to burn.
