What you’ll need

  • 250 g dark cooking chocolate, chopped into small size pieces
  • ⅓ cup cream

Step 1

Bring a small saucepan with 5cm water to the boil. Place a heatproof bowl over the boiling water, ensuring the base of the bowl doesn’t touch the water. Combine the chocolate and cream and stir with a metal spoon until smooth. Remove the bowl from the heat.

Step 2

Allow the ganache to cool, stirring occasionally, until it is thick, glossy and at the required consistency.

To make whipped ganache

Perfect for cupcakes and as a replacement for buttercream, whipped ganache is fluffy and has a lighter colour than traditional ganache. Simply beat the cooled ganache on a fast speed in a stand mixer until it is soft and aerated.
