Quick, easy and delicious. Friends and family love them.
Ingredients
- 2 1/2 cup self-raising flour
- 3/4 cup caster sugar
- 1/2 cup white choc bits
- 1 tsp vanilla essence
- 0.6 cup vegetable oil
- 3/4 cup milk
- 1 egg lightly beaten
- 3/4 cup fresh raspberries
Method

Step 1Sift flour and stir in white chocolate bits and caster sugar.

Step 2Add vanilla, oil, egg and milk.

Step 3Stir with wooden spoon until just smooth. Add a little extra milk, if needed.

Step 4Spoon half mixture into lined muffin tins.

Step 5Add some raspberries to each muffin.

Step 6Spoon over remaining mixture and top each muffin with a raspberry.

Step 7Bake at 190C for 25-30 minutes until cooked through.

- 1 12-hole muffin pan
Recipe Notes
You can change the flavours to banana and choc chip or even orange and poppyseed (change the milk for orange juice). I sometimes use a little less sugar and they work perfectly.
