Ingredients

  • 2 1/2 cup self-raising flour
  • 3/4 cup caster sugar
  • 1/2 cup white choc bits
  • 1 tsp vanilla essence
  • 0.6 cup vegetable oil
  • 3/4 cup milk
  • 1 egg lightly beaten
  • 3/4 cup fresh raspberries

Method

  • Step 1
    Sift flour and stir in white chocolate bits and caster sugar.
  • Step 2
    Add vanilla, oil, egg and milk.

  • Step 3
    Stir with wooden spoon until just smooth. Add a little extra milk, if needed.
  • Step 4
    Spoon half mixture into lined muffin tins.
  • Step 5
    Add some raspberries to each muffin.
  • Step 6
    Spoon over remaining mixture and top each muffin with a raspberry.
  • Step 7
    Bake at 190C for 25-30 minutes until cooked through.

Equipment

  • 1 12-hole muffin pan
Recipe Notes

You can change the flavours to banana and choc chip or even orange and poppyseed (change the milk for orange juice). I sometimes use a little less sugar and they work perfectly.
