White Chocolate Mousse Cones

Ingredients

  • 3 eggs
  • 350 g white chocolate chips
  • 1 cup cream
  • 1 tbs vanilla essence
  • 1 tbs caster sugar

Method

  • Step 1
    Separate eggs. Cut GLAD baking paper into squares about 25cm, then fold in half to make triangles. Then roll these into cone shapes and staple. Place in a glass for stability.
  • Step 2
    Place chocolate into a water bath, then add half the cream, stir in a low heat until melted. Once this has cooled, add the egg yolks. Whip the remaining cream with vanilla and add into mixture.
  • Step 3
    Beat the egg whites and sugar to get stiff peaks, then add this to the chocolate mix and pour into the baking paper triangles. Freeze for 4 hours.
  • Step 4
    To serve, simply remove the baking paper and place upside down.

Recipe Notes
Serve with crushed chocolate biscuits and raspberry coulis.
