Ingredients

  • 4 potatoes grated medium
  • 2 carrots grated
  • 1 zucchini grated
  • 1 egg
  • 1/2 cup tasty cheese grated
  • 1/2 cup plain flour

Method

  • Step 1
    Squeeze excess moisture out of potatoes.
  • Step 2
    Place all ingredients in a large bowl and combine well.
  • Step 3
    Grease a non-stick fry pan with cooking spray or butter. Place tablespoons full of mixture in pan and cook for 5 minutes on each side, or until golden brown.
Recipe Notes
Also very tasty using sweet potato and pumpkin. Diced bacon can also be added.
