An easy way to get the kids to eat their vegetables.
Ingredients
- 4 potatoes grated medium
- 2 carrots grated
- 1 zucchini grated
- 1 egg
- 1/2 cup tasty cheese grated
- 1/2 cup plain flour
Method

Step 1Squeeze excess moisture out of potatoes.

Step 2Place all ingredients in a large bowl and combine well.

Step 3Grease a non-stick fry pan with cooking spray or butter. Place tablespoons full of mixture in pan and cook for 5 minutes on each side, or until golden brown.
Recipe Notes
Also very tasty using sweet potato and pumpkin. Diced bacon can also be added.
