Ingredients

  • 1 barbecued cooked chicken
  • 425 g canned cream of chicken soup
  • 1 cup milk
  • 2 tbs butter
  • 400 g canned pineapple pieces
  • 1 onion
  • 3 tsp curry powder
  • 1 red capsicum sliced
  • 1 pinch salt and pepper *to taste
  • 1/2 cup rice *to serve

Method

  • Step 1
    Break the barbeque chicken into bite sized pieces.
  • Step 2
    Fry onion in curry powder and butter in a large frying pan.
  • Step 3
    Add milk, soup, chicken, pineapple, capsicum, salt and pepper.
  • Step 4
    Simmer until capsicum is cooked to your liking.
  • Step 5
    Serve on cooked rice.
