Simple and easy to make and always a hit no matter when it's served. It is potentially the easiest dinner party meal around and it looks great as well as tasting great.
Ingredients
- 1 barbecued cooked chicken
- 425 g canned cream of chicken soup
- 1 cup milk
- 2 tbs butter
- 400 g canned pineapple pieces
- 1 onion
- 3 tsp curry powder
- 1 red capsicum sliced
- 1 pinch salt and pepper *to taste
- 1/2 cup rice *to serve
Method

Step 1Break the barbeque chicken into bite sized pieces.

Step 2Fry onion in curry powder and butter in a large frying pan.

Step 3Add milk, soup, chicken, pineapple, capsicum, salt and pepper.

Step 4Simmer until capsicum is cooked to your liking.

Step 5Serve on cooked rice.
