A filling lunch that dances on your tongue.
Ingredients
- 1/2 onion diced
- 125 g bacon rashers diced
- 2 pinches dried basil leaves
- 2 pinches black pepper
- 1/4 tsp hot chilli paste
- 1 tbs parsley chopped
- 1 celery stalk finely sliced
- 1 carrot grated
- 250 g penne cooked drained
- 210 g corn kernels drained
- 1 cup mayonnaise *to taste
Method

Step 1Lightly spray a frying pan with oil and fry the bacon, onion, chilli paste, basil and pepper together until the onion turns translucent and the bacon is slightly browned. Remove from heat and cool.

Step 2Mix with all remaining ingredients, adding the mayonnaise last, only using enough to coat the other contents lightly.
