KEEN’S curry powder and thickened cream turn this classic pumpkin soup recipe into a sophisticated first course, or a scrumptious lunch.
Ingredients
- 1 tbs oil
- 1 onion diced medium
- 2 tsp McCormick garlic powder
- 3 tbs KEEN'S Traditional Curry Powder
- 1 potato large peeled cut into 2cm cubes
- 1 kg pumpkin peeled cut into 2cm cubes
- 1 1/2 L vegetable stock (liquid)
- 120 ml thickened cream
Method

Step 1Heat the oil in a large saucepan on high. Sauté the onion, garlic and KEEN’S curry powder in the oil until soft.

Step 2Add the potato, pumpkin and stock, then bring to the boil. Simmer for 40 minutes.

Step 3Purée until smooth, then add the cream and season to taste.
Recipe Notes
Serving suggestion: Serve with a dollop of sour cream and a scattering of chopped coriander.
