Ingredients

  • 1 tbs oil
  • 1 onion diced medium
  • 2 tsp McCormick garlic powder
  • 3 tbs KEEN'S Traditional Curry Powder
  • 1 potato large peeled cut into 2cm cubes
  • 1 kg pumpkin peeled cut into 2cm cubes
  • 1 1/2 L vegetable stock (liquid)
  • 120 ml thickened cream

Method

  • Step 1
    Heat the oil in a large saucepan on high. Sauté the onion, garlic and KEEN’S curry powder in the oil until soft.

  • Step 2
    Add the potato, pumpkin and stock, then bring to the boil. Simmer for 40 minutes.
  • Step 3
    Purée until smooth, then add the cream and season to taste.
Recipe Notes

Serving suggestion: Serve with a dollop of sour cream and a scattering of chopped coriander.
