Just like sticky date pudding; it's very moreish!
Ingredients
- 1 cup pitted dried dates chopped
- 3/4 cup sultanas
- 1 1/2 cups self-raising flour
- 1/2 cup caster sugar
- 3/4 cup milk
Sauce
- 2 cups boiling water
- 2 tbs golden syrup
- 1/2 cup brown sugar
- 30 g butter chopped
Method

Step 1Place chopped dates in a heatproof bowl and cover with boiling water. Stand for 10 minutes.

Step 2Grease a shallow 2 litre ovenproof dish.

Step 3If you have pre-soaked the sultanas, drain. Drain dates.

Step 4Sift flour and sugar into mixing bowl.

Step 5Add drained dates, sultanas and milk. Mix until combined.

Step 6Spread mixture into greased dish.

Step 7In a jug combine, boiling water, golden syrup, brown sugar and butter.

Step 8Carefully pour over batter mix.

Step 9Place dish on a tray in 180C or 170C fan-forced oven, for 40 minutes or until brown and firm to touch in centre.

Step 10Stand for 5 minutes before serving. Serve with ice-cream or cream.
Recipe Notes
If you want a bit of a change, try soaking the sultanas overnight in your favourite rum, sherry or port.
