Ingredients

  • 1 cup pitted dried dates chopped
  • 3/4 cup sultanas
  • 1 1/2 cups self-raising flour
  • 1/2 cup caster sugar
  • 3/4 cup milk

Sauce

  • 2 cups boiling water
  • 2 tbs golden syrup
  • 1/2 cup brown sugar
  • 30 g butter chopped

Method

  • Step 1
    Place chopped dates in a heatproof bowl and cover with boiling water. Stand for 10 minutes.
  • Step 2
    Grease a shallow 2 litre ovenproof dish.
  • Step 3
    If you have pre-soaked the sultanas, drain. Drain dates.
  • Step 4
    Sift flour and sugar into mixing bowl.

  • Step 5
    Add drained dates, sultanas and milk. Mix until combined.
  • Step 6
    Spread mixture into greased dish.
  • Step 7
    In a jug combine, boiling water, golden syrup, brown sugar and butter.
  • Step 8
    Carefully pour over batter mix.
  • Step 9
    Place dish on a tray in 180C or 170C fan-forced oven, for 40 minutes or until brown and firm to touch in centre.
  • Step 10
    Stand for 5 minutes before serving. Serve with ice-cream or cream.
Recipe Notes

If you want a bit of a change, try soaking the sultanas overnight in your favourite rum, sherry or port.
